This is the Red Hat Cake that I made for my friend who is part of the Red Hat Society. It was a surprise for her birthday.
I made a layer carrot cake with sprinkles for a birthday "queen." The cake was wrapped in a big ribbon. This was for our manager at the thrift store; we all celebrated together--a group of gals (and one guy) who volunteer on Saturdays. Props in background.

1 C. regular cream cheese (soft)
2 Tbs butter (soft)
2 C. powder sugar
Beat until smooth. I use this on my 8" layer carrot cake.
